sweet potato soup with red lentils and spinach pancakes Ingredients:
2 teaspoons curry powder 3 tablespoons
olive oil
2 onions, cut into cubes
a grated apple
3 cloves garlic squeezed
piece of grated fresh ginger 800g sweet potato
1l vegetable stock
100g red lentils
lime juice
coconut milk
Put the curry powder and fry pans for two minutes, add oil, onion, apple, garlic and ginger and cook stirring for 5 minutes. Add the grated sweet potatoes, pour broth, coconut milk and lentils thrown. We cook before 20 minutes over low heat, covered. Mix, add lime juice and seasoning to taste if desired.
